This recipe, using our classic sambar podi produces an authentic Mutton Sambar.
500g Mutton | with bones, cut into small pieces
STEP1
Soak 2 Tbs of tamarind (seedless) pulp in 2 cup hot water for 30 minute, squeeze out and discard the pulp. Keep aside.
STEP2
Make a cooking paste using:
250g Onion
4 tsp Coriander seed
2 Tbs Chana Dal
2 Green Chili | chopped fine
4 Garlic cloves | chopped fine
1” Ginger piece | chopped fine
1” Cinnamon stick | broken into tiny pieces
4 Cloves
1 cup Coconut | fresh, chopped fine
Heat 2 Tbs oil in a pan. Add the onions and saute till light brown. Lower heat and add all the other ingredients and stir-fry for 5 minutes. Put all the contents of the pan into a grinder and allow it to cool. Add, 6 tsp classic sambar podi and ½ tsp turmeric powder. Grind to paste and keep aside.
STEP3
Heat 4 Tbs oil in a pressure cooker. Add 10 curry leaf and fry till crisp. Add the mutton pieces, 250g tomato (chopped fine) and salt (to taste). Cook on high heat, stirring frequently, till all the water evaporates. Add the cooking paste and tamarind water—from Step1—and cook uncovered for 3 minutes. Add 1 cup of preheated water, and pressure cook in high heat for 1 whistle and then on lowest heat for 20 minutes. Open the cooker and adjust curry—should not be thick or watery.
