8 Goat trotters | whole, cleaned, bones cracked into three

Heat 3 Tbs oil in the pressure pan; add 150g onions (chopped), and 2 Tbs ginger-garlic paste. Fry till onions are caramel brown. Add 150g tomatoes (chopped), 3 tsp mumbai masala, 2 tsp Kashmiri chili powder, mix and fry till oil starts to oil separate. Add the trotters, ½ tsp turmeric powder, 4 green chilies (1” pieces) and salt (to taste). Put 9 cups water. Pressure cook at highest heat for 1 whistle; then at lowest for 1 hour. Open pan, and if required thicken gravy. Depending on the gravy thickness, it can be relished with roti, nan, paratha or rice. On the Mumbai street, it is served as a soupy gravy with pav.
