brahmani goda masala is a Maharashtrian masala mix traditional to brahmin cuisine which is characteristically less spicy and highly flavorful. Famous recipes using this blend are the delectable masale bhaat and bharleli vangi, though there are many others. What more it is great for non-brahmin and non-Marathi cooking as well. Try it!

INGREDIENTS
Coriander Seed, Coconut, Sunflower Oil, Sesame Seed, Cumin Seed, Cassia Leaf, Niger Seed, Black Pepper, Clove, Black Cardamom, Stone Flower (dagad-phul), Poppy Seed (khus-khus), Cinnamon, and Cassia Bud.

USAGE
Typically 2 tsp in ¼ kg main ingredient; variations appear in some recipes.

1 cup Snake Gourd/Padval | halved, deseeded and sliced
½ cup Field Bean/Val | soaked, sprouted, skin removed

STEP1
In a pressure cooker steam the field bean till half cooked. Keep aside.

STEP2
Heat 1 Tbs oil in a pan. Add ¼ tsp mustard seed, ¼ tsp asafetida, ¼ tsp turmeric. Add the half-cooked field bean, 1 Tbs water, mix and cook covered on low heat for 1 minute. Add 1 tsp brahmani goda masala, 1 tsp jaggery powder—or grate the jaggery—the snake gourd and mix well. Cook covered for 3 minutes, stirring occasionally. Add 1 Tbs grated coconut and salt (to taste). Mix and cook till the bean and the gourd are soft enough and only little gravy should be left—make sure that they are not over cooked and lose their fresh look. Serve garnished generously with grated coconut and/or coriander leaf.
