STEP1
Chop 250g onion fine. Keep aside.
STEP2
Heat 1 Tbs oil In a pressure pan, add 1 tsp ginger-garlic paste, 3 Tbs onion—from Step1—and fry till the onion is translucent. Add the mincemeat, ½ tsp salt, ½ tsp turmeric, ½ cup water and mix well. When it starts to boil close the cooker and cook over low heat for 15 minutes. Keep aside for the pressure to release naturally.
STEP3
Heat 1 Tbs oil and 1 Tbs butter in a frying pan, add 1 tsp ginger-garlic paste, and the remaining onion—from Step1. Stir-fry till the mixture is brown. Add 50g capsicum (chopped), 50g tomato (chopped) and stir-fry fry for 2 minutes. Add 2 tsp red chili powder, 1½ tsp Mumbai Masala and fry till oil separates. Add the cooked mince—from Step2— with the stock and fry till the water dries. Whisk 3 eggs in a bowl and slowly pour over the kheema, spreading it around. Mix well and let it cook for 30 seconds covered. Mix well again and let it cook for 1 minute covered. Squeeze some line juice and garnish with coriander leaf while serving. Serve with pav or bread.
